Strawberry Flowers
These pretty and delicious strawberries are cut to look like flower petals then stuffed with a cream cheese mixture! The recipes looks a lot more complicated than it really is! I made these for a baby shower last year and everyone LOVED them!!

Ingredients:
32 fresh whole strawberries, large
11 to 12 oz. cream cheese, softened
1/2 cup confectioners' sugar
2 tablespoons semisweet or milk chocolate, grated
Preparation:
Cut a thin slice from the stem end of each strawberry, allowing the berries to stand upright on flattened end. Place berries, cut side down, on a serving platter. Cut each berry carefully into 4 wedges, cutting almost to, but not through, bottoms. Fan wedges just slightly, taking care not to break; set berries aside
In a mixing bowl, beat together the cream cheese, confectioners' sugar, and almond extract until light and fluffy. Gently fold in grated chocolate. Using a teaspoon or decorating bag with decorative tip, fill the strawberries. If desired, sprinkle with a little more grated chocolate. Cover and chill until ready to serve. Makes about 32 filled strawberries.

Happy Monday!
I feel like the word "happy" and "Monday" shouldn't be in the same sentence, but it's only a title so it works. Today has been anything but happy..more like rainy and dreary, but thats just a good excuse to be lazy after rushing around for the Christmas season all month!
I enjoyed spending time with my family and friends, it was definitely two heavily packed days, but it was great and wouldn't have wanted it any other way!! I spent Christmas Eve at my man's house with his family and we spent Christmas day at my parents house. I definitely gained 5 pounds in 48 hours!! okay..maybe not, but it sure felt like it!
My very best friend/roomie is now engaged!! It just so happens that she is engaged to one of my good guy friends. I introduced these two at my birthday party a few years ago and they have been together ever since!! Looks like 2012 will be packed with planning and performing Maid of Honor duties! Congrats to the happy couple, Cole and Cyndi!

Chocolate Chip Cheeseballs
I made Chocolate Chip Cheeseball's for one of our Hotty Toddy Tailgates this past football season and they were a huge hit!!! The recipe calls to roll the mixture into one large ball, but I rolled mine into small bite size balls, and it worked out perfect!! These are devine!!
Ingredients:
1 (8oz.) package of cream cheese, softened
1/2 cup butter, softened
3/4 cup confectioners' sugar
2 tbsp brown sugar
1/4 tsp vanilla extract
3/4 cup miniature semisweet chocolate chips
3/4 cup finely chopped pecans (I also rolled some in graham crackers, and chopped walnuts..try whatever you like!)
Directions:
1. In a medium bowl, beat together cream cheese and butter until smooth. Mix in confectioners' sugar, brown sugar and vanilla. Stir in chocolate chips. Cover, and chill in the refrigerator for 2 hours.
2. Shape chilled mixture into a ball ( or balls ). Wrap with plastic, and chill in the refrigerator for 1 hours.
3. Roll the cheese ball in finely chopped pecans (or your preference) before serving.
Enjoy!!
